GREEN BAY, Wis. (WFRV) – Every first Thursday of the month, Local 5 News presents the Dish on Wisconsin Supper Clubs.
The latest stop is a new kid on the block, along Brett Favre Pass and just steps from Lambeau Field, is the Heritage Modern Supper Club at Green Bay’s Legacy Hotel.

Your are immediately struck by all the natural light and the sounds of ice cubes being tossed about in a cocktail shaker.
The lobby bar, just outside the supper club, is called Uncommon.
The afternoon sun glistens through the wall of colorful spirit bottles. Out-of-towners and locals alike are invited to enjoy their modern take on the Wisconsin supper club, which, of course, includes cocktails.
Appleton Native Brittany Sack has worked in supper clubs before. She started as a server at Heritage and has worked her way to bar manager. There is a top-floor bar in the Legacy called the Cardinal’s Crest.
“People are like what’s old-fashioned, and it’s fun for us,” Sack says with a big smile. “We get to teach everyone what a traditional old-fashioned is here in Wisconsin.”
When Local 5 News visited she walked us through the steps of her maple smoked old-fashioned cocktail with J. Henry bourbon, a Wisconsin made whiskey.
In fact, from the bar to the kitchen, they prioritize using local and state products.
They’re also bringing back table-side service where the general manager will slice the entree at the table during service for the Dover Sole and the Steak Tartare.
“Everything old is new again,” Chef Morse told Local 5’s Michele McCormack. “So, it’s a little bit of showmanship with a little more interaction with the guests.”
Take some time to build up your appetite because Morse is a De Pere native and knows what supper clubs expect.
The menu includes classics French onion soup, crisp wedge salad, a Friday fish fry and traditional Schaum Torte desert. But he does bring a unique take on many dishes, including the short rib.
“It’s a play on pot roast,” Chef Morse revealed. “You cut into it, and it melts in your mouth—just a lot of flavor. We’re not always supposed to do the same thing. It’s what goes with the steak and makes it better than just a steak on a plate with some sauce and potatoes.”
A lot of folks like to cozy up in the booth. It’s all about the lighting here at all times of day.
“We have a lot of windows, a lot of natural sunlight. It’s really beautiful,” said General Manager Sue Engler, who admitted the boot is her favorite. “The fixtures here give this modern feel of an old nostalgic environment.”
